In the past (from c. 7th century) tea was made in China by grinding tea bricks and whisking the powder in your tea bowl. But in the 14th century the use of tea leaves became mandatory and so teapots to steep the leaves became indispensable.
The teapots that best enhance the tea are made in Yixing, west of Shanghai, from a local clay called zisha (purple sand). It is fired at high temperatures to produce a stoneware that is waterproof without the need for glazing (as with earthenware) while remaining porous, which preserves the heat, flavor, and aroma of the tea.
